Viticulture
The terroir is called Vigna Campo and is located in Val Canzeria at an altitude of 400 metres, in the municipality of Chiaramonte Gulfi (Ragusa), in the south of Sicily. Canzeria is the name of Arabic origin which means 'place of the boars'. The climate is Mediterranean-temperate, and is characterised by strong thermal variations. The soil is limestone and slightly clayey. The vineyard was planted in 1999 at a density of 9000 vines/ha.
Oenology
The grapes are harvested in mid-September and vinified in steel vats and barrels of 225 to 500 litres. The wine is aged for one year in the same containers. Light sulphiting.

Rock fish in sauce - Crustaceans - Octopus in manzanilla jelly - Tartar of féra from Lake Geneva.
