The metaPHUSIS range is made from grapes or wines purchased from respectful winemakers whose work and plots Steve Bettschen knows.
Oenology
This unusual wine is made from a Chasselas grape harvest from La Neuveville. Immediately after harvesting, the grapes were frozen and then pressed so that the must could be enriched with sugar. After fermentation, the wine was aged for a long time in barrels, sometimes with the appearance of the famous veil. It went through a whole succession of states to end up oxidative, complex, intense, with a balance of about 10g of residual sugar for 18% vol. of alcohol. Very solid, it can be kept open for many months.
Suggestions for accompaniment
Aperitif, strong tapas (ham, olives), salty hard cheeses. Or after the meal, for conversation.
