Viticulture

This is a small 15-acre vineyard in Avize that produces about 1,000 bottles per year. South facing, the soil is worked only by horse. Historically, the "Maladries" were hospitals in the Middle Ages. Southern exposure, predominantly chalk.

Oenology

Partial malo, 30% of the maturation in barrels. Dosage 2 gr/l, disgorged June 2017.

Suggestions for accompaniment

Puff pastry of turbot with sorrel - Crayfish salad - Half-dried goat cheese.

Etienne Calsac

Artisan-winemaker, this is how Etienne Calsac presents himself, a young harvester-manipulator established in Avize on the Côte des Blancs, who has taken over the vines from his grandparents. 2.8 ha in total spread over Avize, Grauves and Bisseuil in the great valley of the Marne. The average age of the vineyard is thirty years and the estate is certified "high environmental value". Etienne Calsac attaches great importance to working the soil and produces confidential champagnes of great purity, incisive and fine. 70% of the estate's production is exported.
