Viticulture
Le Grand Clos is a family estate of 7 ha located in the commune of Satigny. The vineyard on the hillside is grassed over and maintained with the utmost rigour. A lot of work is done in the vineyard, which produces little but gives healthy and concentrated fruit. The grapes are harvested when they are fully ripe in terms of alcohol, phenolics and aroma.
Oenology
Made with raisined grapes, straw wine method, interrupted alcoholic fermentation, no malolactic fermentation, grape varieties vinified separately and blended at the time of creating the solera (blend of several vintages).
Suggestions for accompaniment
Foie gras terrine with pepper and saffron - Chicken with ginger - Orange carpaccio with orange flower syrup.
