Viticulture
The Boisard brothers are the great hopes of the village of St-Nicolas de Bourgueil. Their vineyard is cultivated in accordance with the precepts of organic farming. The vines are 20-30 years old for this cuvée, with a yield of 50 hl/ha.
Oenology
No chaptalization, no yeasting. After destemming the grapes, the whole berry macerates in vats for 16 days. 6 months of maturing in vats.

Risotto with aubergines - Saltimbocca - Duck breast with olives.
