Viticulture
The Boisard brothers are the great hopes of the village of St-Nicolas de Bourgueil. The cultivation of their vineyard is very demanding and is done according to the precepts of organic farming. For this cuvée, the soils are of a clay-limestone nature with the presence of tuffeau. The vines are 50 years old and produce about 30 hl/ha.
Oenology
No chaptalization, no yeasting. After destemming the grapes, the whole berry macerates in wooden vats for 30 days. 10 months of maturation in oak barrels of 2 to 6 wines.
Suggestions for accompaniment
Jelly of chuck and its cooking vegetables - Sauté of lamb kidneys with lemon confit and coriander - Duck breast with cherries.
