Viticulture
The Clos de la Cerisaie vines represent about 1.3 hectares of Cabernet Franc and 70 ares of Chenin. This is the main wine of the estate. The vines are 45 years old on average. They are located on the bottom of the Cerisaie hillside and face east. The bedrock dates from the Middle Turonian period. It is a formation of micaceous chalk, characterised by a white tuffeau with a fairly fine grain. The soils are shallow and composed of a mixture of chalk and clay.
Oenology
The red is aged for twenty months in wood and then four to six months in vats.

Grilled tuna steak - Quasi veal, chard gratin - Baked peppers.
