Aymeric Hilaire and Mélanie Cunin's white Clos de la Cerisaie has, in ten years, reached the highest level of the great dry chenins of the Saumur region and even of the whole of the Loire: rich and full-bodied, with hints of citrus fruit (orange peel, pomelo), it is striking for its straightforwardness and fresh length. Viticulture

The Clos de la Cerisaie vines represent about 1.3 hectares of Cabernet Franc and 70 ares of Chenin. This is the main wine of the estate. The vines are 45 years old on average. They are located on the bottom of the Cerisaie hillside and face east. The bedrock dates from the Middle Turonian period. It is a formation of micaceous chalk, characterised by a white tuffeau with a fairly fine grain. The soils are shallow and composed of a mixture of chalk and clay.

Oenology

The white wine is aged for twenty-four months in wood. It is bottled in November.

Tuna tartar with lemon balm - Prawn salad with curry - Goat cheese.
