Hidden in the heights of the Côte de Beaune, Saint-Romain is surrounded by cliffs. The vines, facing south-south and north-north-east, have the particularity of being high up (between 280 and 400 metres in altitude). This Saint-Romain comes from 20% of the Sous Roches and 80% of the Jarrons, in the lower part of the village. The vines, about thirty years old on average, are planted on a very stony soil and offer wines of a very beautiful balance, pure and crystalline.
Oenology
The wine is aged for 12 to 14 months without new barrels.
Suggestions for accompaniment
Pan-fried prawns with chickpeas and spinach leaves - Fish curry - Goat cheese.
