Viticulture
The place called "Les Coères" is one of the most important in the appellation in terms of surface area. The parcel vinified by Alix de Montille is located at the top of the parcel, a place favourable to minerality. The vines, which are on average 25 years old, are cultivated organically.
Oenology
The grapes are harvested by hand using small 10 kilogram boxes. This Montagny Premier Cru needs time to express its full potential. Fermentation takes longer. The maturation period is therefore longer (15 months on average).
Suggestions for accompaniment
Pan-fried prawns with chickpeas and spinach leaves - Fish curry - Goat cheese.
