This cuvée is the result of the blending of about fifteen different plots of land, located around the estate in the commune of Epfig, cultivated in Biodynamic methods. The soils are varied: clay, gravel and sand in different proportions. This is a fruity wine in which the estate seeks to immortalise the personality of the village's predominantly sandstone terroirs, which give it a delicate and sapid personality.
Oenology
The grapes are gently pressed in whole bunches using a pneumatic press, and the wine is made entirely in stainless steel tanks, with a long fermentation, using only indigenous yeasts, and maturing on the lees.
Suggestions for accompaniment
Skewers of supions - Onion tart - Sauerkraut - Roasted scallops with endives and lime.
