Viticulture
Muenchberg is a Grand Cru with a total surface area of 17 hectares; the estate owns 2.10 hectares, of which 0.50 hectares are planted with Pinot Gris on the north-eastern point where a limestone vein emerges, mixing with pink sandstone and volcanic sediments dating back 250 million years. Its ideal altitude (between 250 and 300 metres) protects it from excessive heat, while preserving great complexity in the wines. The yields are between 20 and 30 HL/ha depending on the year. Pruning is short, with 2 small canes of 5-6 eyes. Certified organic and biodynamic.
Oenology
After a gentle pressing, it was, as usual at the estate, vinified and aged in Burgundy barrels of Vosges oak for a year and malted there. It was bottled in September.

Calamari sautéed with lemongrass - Sea bass tartar with citrus fruits - Fish curry - Goat cheese.
