Viticulture

The Clos les Montys dominates the slopes of the Goulaine marshes. Its exposure and its exceptional soil (superficial sandstone soil on amphibolite and metagabbro parent rock) give the vine an unusual precocity. Indeed, it is one of the first to spread its leaves in spring. Paradoxically, this terroir, known as "green rocks", offers a thick-skinned grape (thanks to the calcium) which does not spoil and can be harvested quite late.

Oenology

Twenty percent of the wine is vinified in oak barrels in the old cellars, and the rest in a modern, temperature-controlled cellar. Throughout the winter, the Muscadet remains on its fine lees, without any racking; month after month, the aromatic complexity asserts itself and the structure grows. Gradually, the autolysis of the yeasts takes place, releasing amino acids and increasing the aromatic complexity. The wine is bottled in the spring of the year following the harvest.
