This wine was one of our favourites at the last Wine Paris exhibition. In this vintage of great classicism, both accessible and deep, with perfect ripeness, he signs a superb Moulin-à-Vent, which offers a fine nose of pepper, cherry and mint, supported by a vinous and juicy mouth, ascending, with great potential. Viticulture

This cuvée is the first of the estate's Moulin-à-Vent wines. A blend of vines aged between 25 and 100 years from 5 different terroirs harvested and vinified separately (Champs de Cour, Burdelines, Brusselions, Greneriers, Perelles, Aux Caves, which represents about 6.5 hectares). Sandy-silty and clay-sandy soils. Viticulture close to agrobiology.

Oenology

Traditional vinification in whole bunches as much as possible, semi-carbonic maceration. Aged for eight to eleven months in stainless steel vats.

Suggestions for accompaniment

Pork tenderloin - Roast poultry - Guinea fowl.
