  • Grape variety(ies): Petite arvine

Gérard Dorsaz has a special love for Petite Arvine. His cuvée presented here is a selection of a single parchet identified for its singularity, then aged for a long time in order to reach the full potential of the grape. The result goes far beyond the simple varietal and plunges to the heart of the terroir, with its abundant citrus aromas, its tension and its impressive length. Decant for an hour or two to enjoy it now.

Viticulture

This wine is made from indigenous vines, probably originating from the Martigny region. As the plant matures late, it must be exposed on the best slopes. This new wine comes from a single parcel identified by the winemaker for its singularity and the breed of the wines produced. Production is limited: barely 790 bottles in 2013.

Oenology

Here, the maturation on lees in vats has been extended until June with weekly stirring of the lees. The aim is to produce an arvine for ageing.

Suggestions for accompaniment

Back of hake with artichokes and lemon confit - Grilled salmon steak with Teriyaki sauce and Shiso leaves - Hot foie gras with lemongrass
