We had never tasted this vintage at this level! Viticulture

The Loup Blanc vineyard is a winegrowing operation located in the hamlet of Bize-Minervois on the border of the Aude and Hérault departments. The vines are planted around the hamlet, at the crossroads of the AOP St-Chinian, St-Jean de Minervois and Le Minervois, of which they are all part. Organic farming is certified. Clay and limestone soil. Yield: 35 hl/ha. Age of the vines: 40 years.

Oenology

Green harvesting if necessary and manual collection in sorting boxes. Traditional vinification: total destemming, punching down, pumping over. Aged in wooden truncated cone-shaped vats.
