This cuvée comes from the cold, late-ripening terroirs of Chapouin (sand) and La Janasse and the La Crau plateau (sand). Surface area: 7 ha. The oldest vines were planted in 1912. The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weedkillers to maintain the aeration and flexibility of the soil. Yield of 28 hl/ha.
Oenology
80% de-stemming. Maceration for 26 days with daily manual punching down. Aged 2/3 in tuns and 1/3 in demi-muids (600 litres).
Suggestions for accompaniment
Hare à la royale - Partridge, pheasant or woodcock - Meat in sauce.
