Viticulture
Sandy-clay soils of La Janasse and La Crau. Surface area: 1.10 ha. The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weedkillers to maintain the aeration and flexibility of the soil. Yield: 25/30 hl/ha. Harvested in crates.
Oenology
Pneumatic pressing. The Grenache and Clairette are vinified in vats. The Roussannes are vinified in barrels. -The Grenache and Clairette are aged in vats for seven months, with stirring on the lees. The Roussannes are aged in barrels (80% of which are new) for seven months, with regular stirring of the lees.

Octopus salad with citrus fruits - Fresh or very lightly ripened sheep's cheese.
