Viticulture
Plot planted in 1975 on very poor and chalky soil. Made from grapes harvested at 95-6 Oe and yields of 400 g/m2 harvested on 28 and 29 August 2018, mostly a juice yield of 60%. Malolactic fermentation carried out in this vintage.
Oenology
Direct and gentle pressing. Static settling for 24 hours. Fermentation at controlled temperature in stainless steel tanks. Little So2 due to maturation in cold cellar. Malolactic fermentation carried out in this vintage. No fining or filtration before bottling according to the lunar calendar to respect the organoleptic qualities of the wine.
