Viticulture
Vines from 50 to 120 years old, free-standing and therefore planted directly in the sand. Terroirs Giba, S. Anna Arresi, P.to Pino, Calasetta. South / south-west exposure. Goblet cultivation.
Oenology
Vinification in wooden truncated cone vats. Maceration for 20-25 days. Aged in 750 L Austrian demi-muids and 20 HL tuns for 18 months. Successive maturation in bottles for one year.
Suggestions for accompaniment
Spaghetti with bottarga - Potato gnocchi - Veal tartar with rocket.
