This beautiful Burgundy comes from a hillside terroir (above Pommard) and a whole harvest fermentation. The nose delivers notes of liquorice, black fruit and a touch of peppermint. The palate has a strong personality, it is full and dense, with tight but fine tannins: the proximity of Pommard is felt, but the finish is admirably fresh and salivating.

Technique

Viticulture

0.26 hectares. 40 year old vineyard, on the slope of Pommard (near the Pommard Vignots). Full western exposure. White marl soil. Yield: 35-40hl/hectares.

Oenology

Hand-picked, sorted grapes, gravity-fed, whole grape vinification. No sulphur at vatting, indigenous yeasts, gentle maceration and fermentation, little punching down, closed vats. Aged in rooms and 500-litre barrels, no new wood, on lees for 14 months. Bottled without filtration in a favourable moon, very little added sulphur.
