Viticulture
This cuvée is a blend of grapes from various plots: 2 from the Vignane cru in Barolo, 2 from Montforte d'Alba (from the Ceretta and Conterni crus) and 1 from the Merli cru in Novello. The vines have an average age of 25 years.
Oenology
The alcoholic fermentation is carried out in vats with a 6 to 10 day skin maceration. Malolactic fermentation and maturation are carried out in 500-litre French oak barrels (approximately 24 months).

Carne cruda - Tajarin with ceps - Grilled suckling pig.
