Viticulture
Production area: La Morra and Castiglione Falletto. Bottles produced: 12000-13000/year. Vines 20-30 years old. Terroir of complex and mixed geological nature, mixing clay, sand, limestone and marl. Various exposures, mainly south, south-east.
Oenology
Temperature controlled maceration in self-rotating vats for 4/5 days, aged in French barrels for 24 months.
Suggestions for accompaniment
A Chateaubriand entrecote - Beef carpaccio - Veal sweetbreads with truffles.
