It opens with a spicy (lovage, cinnamon), fruity (cherry, almond, walnut) and floral (carnation, immortelle) flavour with hints of amber and incense. It is a complex wine and characteristic of its appellation. A little fresher than the Fino, it reveals the classic saline note on the palate and is very dry. Here it is the terroir that takes precedence, as Manzanilla is produced in Sanlucar de Barrameda, the part of the Jerez vineyard closest to the sea. The wine is aged in the solera, under the flor (sail), for no more than 6 years. The wine has 15% alcohol and less than 1g of residual sugar.
