Tokaji Szamorodni Sec (oxydatif), Samuel Tinon (50 cl) - 2009

  • Provenance: Tokaj
  • Appellation: Tokaj
  • Domain: Samuel Tinon
  • Grape variety(ies): Furmint 90%, Hárslevelü 10%
  • On-call time: 25 years
  • Alcohol degree: 14.5%
This is the most secret wine of Tokaj and of the estate, but perhaps also the most ancestral, surprising. The attack is powerful and lively; it precedes a rich and complex, dynamic, juicy palate, with flavours of dried fruit and citrus. The finish is very long and ends with a beautiful bitterness, with an explosion of aromas and a sensation of salinity in retro-olfaction.

Viticulture

Loess soil, clay on a limestone base on the Olaszliszka vineyard. Age of the vines: 90 years. Massal selection.

Oenology

Dry Tokaji Szamorodni expresses the potential of great wines aged under a veil of yeast. It is the historic wine, known in Poland and northern Europe. It should be noted that it is the only dry wine in the world made from botrytised grapes. Ageing is essential here. Years in the cask are necessary for the wine to develop its specific aromas and taste under veil and to find a beautiful and noble balance.

Suggestions for accompaniment

Lobster with Vin Jaune - Chausson with truffles - Vieux Comté, Gruyère or Etivaz.
