Produit par un grand (au sens propre et figuré !) vigneron star de la Saar, ce vin affiche un caractère droit et sans concession du cépage et des vertigineux terroirs de schistes locaux. Très jolies notes de fruits secs, de miel et de fleurs au nez, avec un fond minéral prégnant. La bouche est menée par une noble amertume et trace à merveille, appelant de beaux mets.

Viticulture

Le domaine est situé en Moselle-Sarre-Ruwer et plus précisément sur les bords de la Sarre, dans le village de Wiltingen. Il a été racheté par le propriétaire actuel, Roman Niewodniczanski, en 2000. Les vignes de cette cuvée ont au minimum 30 ans et sont situées en coteaux sur différents sols schisteux du Dévonien, avec des mélanges de rhyolithe, de porphyre et de quartz d'origine volcanique.

Van Volxem is situated in the Saar in the historic centre of Wiltingen and was built on the ruins of a Roman villa, the remains of which can still be found in the estate's park. Its vineyards, some of which were planted on the best schist slopes of the Saar by the Romans as early as the 3rd century, are among the oldest in the region. Rediscovered and developed by monks in the 11th century, it was cultivated from the 16th century onwards by the Jesuit Order, then transformed into a wine-growing monastery in 1743. During the French Revolution, the ecclesiastical lands were secularised.
