Viticulture
The estate is located in the heart of the Pic Saint-Loup appellation, at an altitude of between 150 and 200m, on a terroir of clay-limestone slopes with a south, south-east exposure. Yields of 15 hl/ha for this cuvée from a vineyard planted in 1990. The estate is certified Organic Agriculture as of the 2010 vintage.
Oenology
Traditional vinification and maceration for 35 days with manual punching down. Aged for 24 months in barrels with 30% new wood.
Suggestions for accompaniment
To be decanted for 1 to 2 hours and then enjoyed with a roast goat, a leg of lamb or a fillet of beef en croûte.
