Viticulture
Vineyard in organic conversion. Wine from 2 parcels: one (0.50 ha) in its 3rd year of organic conversion, the other (0.27 ha) in its 1st year. Limestone soil with shell debris, red iron soil. East-South-East exposure. Area: 0.78 ha - Age: 15 and 40 years - Yield: 20 hl/ha.
Oenology
Natural yeasts - Vatting time: 12 days with 5 days of pre-fermentation cold maceration (natural). Ageing: 12 months in barrels, 50% of which are new. Bottled by gravity, without fining or filtration.
Suggestions for accompaniment
Poultry stew with ginger and watercress juice - Pigeon tajine - Veal aiguillette with tarragon.
