Technique

Viticulture

Produced in collaboration with Elliot Magnin of Cave Royale, Lausanne. In 2018, Benjamin Massy is harvesting the estate's only plot of Calamin, which until now has not been used because it is too small to vinify (600 square metres).

Oenology

These are the first grapes of the cellar to be harvested, long vinification then maturing in concrete eggs; and finally bottling in a Burgundy bottle (75cl) instead of the traditional Vaudois pot (70cl), corked with wax.

Suggestions for accompaniment

Arctic char with lemon butter - Hard cheeses.
