Capricious and very demanding in the vineyard, it hides under its purplish colour very beautiful fruity and floral notes (black cherry, blackberry, violet) with some spicy touches such as clove. It is also characterised by a freshness and well-presented tannins and continues on a sylvan and even nobly wild aroma. A very fine wine.

Viticulture

Originally from the Aosta Valley, Cornalin is one of the oldest grape varieties planted in Valais. Before 1972, it was called "Rouge du Pays" (Landroter in the Upper Valais).

Oenology

Indigenous yeasts, 3 week vatting period with 2 pumping overs per day. Aged for 10 months, 80% in vats and 20% in barrels.

Originally from Fribourg, Romain Cipolla discovered the world of wine at the gym during a tasting session with some friends. His passion was born. He then trained in oenology and viticulture. After internships with Claudy Clavien in Miège and Philippe Constantin in Salquenen, Romain continued his quest and moved to the Upper Valais in 2014. In Rarogne more precisely, a place dear to those who love Rilke. Romain Cipolla works 2.5 ha of vineyards on the slopes between Rarogne, St-German and Visperterminen; some of them, very steep with slopes of more than 30% making mechanisation impossible, were doomed to disappear. He practices organic viticulture and produces wines of great purity.
