Viticulture

The vineyard is located in the commune of Saint-Christoly de Médoc, overlooking the Gironde estuary, and in the commune of Couquèques 10,000 vines/ha. Soil 65% clay-limestone, 25% gravel, 10% gravelly sand. Average age of the vines: 45% 50 years, 40% 25 years, 14% 10 years, 1% 150 years. Yields of about 50 hl/ha.

Oenology

Manual harvesting in crates. A first sorting of bunches is done on a table before manual destemming on oak racks. The grapes are then taken back for a second sorting before crushing in a manual mill. Cold pre-fermentation. Bleeding, manual punching of the cap. Vatting time of 30 days. Pressing with a vertical press. Malolactic in new barrels. Aged in an air-conditioned cellar in new French oak barrels for 15 to 17 months.
