Le Chêne Vert is unanimously recognised as one of the greatest climates in the Chinon appellation and even in the Loire Valley. Its perfect exposure on the hillside makes it the earliest vintage of the estate. It offers a superb full and rich palate, filled with "great" tannins that are both full and fine, with exemplary maturity. Viticulture

One of Chinon's mythical sites, located in Haute Olive, on the right bank of the Vienne. The very steep slope of this two-hectare vineyard, its south-western orientation and its clay and silica-limestone soil explain why it is one of the oldest crus in the entire appellation. The place owes its name to the monumental holm oak tree which overhangs it, the regrowth of an eight hundred year old tree planted by the monks of Bourgueil Abbey in the 12th century.

Oenology

The duration of maceration and vatting are similar to those of the Varennes, with the specificity, from the 2008 vintage, of being made in wooden vats. Pumping over and punching down. Alcoholic fermentation sometimes followed by malolactic fermentation on the marc. Prolonged ageing in barrels of 1 to 3 wines (12 to 15 months).

Braised beef with small onions - Veal aiguillette and polenta.
