As soon as he took over the management of the estate in 1922, Baron Philippe de Rothschild became so passionate about the family property that he included Mouton in the circle of the first GCCs by ministerial decree in 1974. The vines are situated on a superb hillside of deep Garonne gravel. The density is 8,500 vines/ha. The average age of the vines is 45 years, with a few hundred-year-old vines on the Carruades plot!
Oenology
After a light crushing, the grapes are placed in vats by gravity. 90% of the alcoholic fermentation is done in vats, the rest being done in barrels. A maceration of 3 weeks takes place and then the blending is done when the wine is put into barrels (100% new wood), after the malolactic fermentation. The barrels spend 6 months in the cellar and then 12 months in an underground cellar at Mouton-Rothschild.
