Viticulture
Pascal Montaut is one of the pioneers of the so-called "satellite" appellations Côtes de Blaye and Côtes de Bourg (Clos Alphonse Dubreuil). Following the model of F. Mitjaville (see Roc de Cambes), great care is taken here in viticulture (green harvesting, leaf removal, etc.). The terroir is composed of blue and grey clay with fossils.
Oenology
Manual harvest, 40 hl/ha, 80 to 100% destemming depending on the year. Aged 15 to 16 months in barrels with 50% renewal.
