Rhône Valley region. Production area located on both banks of the Ardèche River, near the famous gorges of the same name, with Saint-Rémèze located almost in the centre of the boundary, more precisely within 9 municipalities in the Ardèche department and 5 in the Gard department. Classified as an AOVDQS (Appellation d'Origine Vérifiée des Vins de Table) with three crus: Orgnac-l'Aven, Saint-Montan and Saint-Rémèze in 1999. Area under production: over 650 hectares. White grape varieties: Grenache with a minimum of 50% for white wines; Clairette and Marsanne with a minimum of 30% together or separately; black: Grenache with a minimum of 60% and a maximum of 80% for rosé wines and a minimum of 30% for red wines; Syrah with a minimum of 10% for rosé wines and a minimum of 40% for red wines; Accessory grape varieties: Carignan (authorised until 2017 inclusive) for red wines only and Cinsaut with a maximum of 10%. Vinified as: white, rosé and red for the vast majority. Can be stored for: an average of 2 to 3 years, or even longer, depending on the vintage and the cru. Ideal serving temperature: between 8 and 10°C for white and rosé wines; between 15 and 16°C for red wines. Pairings: rosé wines with cold meats or white meat; white wines with shellfish and crustaceans; red wines with veal paupiettes.
