Back Burgundy region. Production area located about ten kilometres south-east of Auxerre, more precisely within the municipalities of Chitry, Irancy, Quenne, Saint-Bris-Le-Vineux and Vincelottes, in the Yonne department. Classified as a communal AOC in 1974. Area under production: just over 100 hectares. Grey grape variety: Sauvignon. Vinified exclusively as white wine. Can be drunk: young, up to a maximum of 3 years. Ideal serving temperature: between 8 and 10°C. Pair with: grilled andouillette sausage, scallops à la Boilly.
