Culture of microorganisms used to induce or activate fermentation. Under certain conditions, the indigenous yeasts present on the grapes are not sufficient to trigger fermentation. The winemaker uses a yeast starter made from yeasts specially selected for their alcohol-producing, aromatic and heat-resistant properties, etc. See starter culture.
