Classified as an AOC in 1950. Area under production: just over 1,440 hectares. White grape variety: Chenin, harvested manually, when overripe and through successive sorting. Vinified as a sweet white wine.

The special designation "sélection de grains nobles" (selection of noble grapes) may be added under certain conditions.

It can be kept for a minimum of 4 to 5 years, up to 20 years or more, depending on the vintage. Ideal serving temperature: between 7 and 8°C. Pair with: a young wine, fish or white meat in sauce, or a dessert with white fruits, such as pear sorbet or almonds; a slightly older wine, foie gras or dessert.
