Definition: Génépi

This plant is used to make the famous génépi liqueur. Due to the relative scarcity of this plant, it is advisable to leave half of the flowering stems on each clump of plants harvested.

The recipe for génépi is simple: forty sprigs of génépi must be macerated in a litre of 40°C alcohol for forty days with forty sugar cubes. After forty days, the génépi is ready to drink. This alcohol also has the medicinal properties mentioned above. In Valais, the alcohol used for this maceration can come from the distillation of dregs or lees.
