Definition: Evolution

The colour of wine changes more or less rapidly depending on its age. White wines evolve from greenish yellow to straw yellow, golden, then amber, with a tendency to brown. Rosé wine evolves from pale raspberry pink to bright strawberry pink, then orange, then brick red. A red wine can evolve from a very deep burgundy to more brownish shades and lighten to a brick or tile colour. These shades are most noticeable around the edge of the glass. The evolution also affects the aromas and flavour.
