A crown of bubbles forming after the foam on the surface of a glass of sparkling wine. A persistent string of bubbles on the surface of the disc and the fineness of the bubbles are signs of quality. Particularly indicative of the quality of the mousse-making process, continuous strings of bubbles are the most sought-after. Glassmakers have created flutes with a point of foam at the bottom of the bowl. From this frosted area, a much more active cord develops.
