A wine defect that takes on the smell and taste of hydrogen sulphide released by the transformation of sulphur dioxide, a preservative added during the winemaking process. A wine with a bock or bocké taste (Swiss and Alsatian expressions) has a smell reminiscent of rotten eggs. See also the synonym: mercaptan.
