Definition: beta ionone

Alpha ionone is the natural fragrance component of violet essence.
Among the aromas and scents, substances with pleasant odours (which must of course be diluted after extraction, otherwise they have a strong and unpleasant odour) include aromatic, aldehyde, ketone and isoprene compounds (oligomeric or polymeric derivatives of isoprene: mono-, di-, tri-, tetra- and polyterpenes).
Many natural molecules have pleasant tastes or scents and are used in perfumery or the food industry. These substances include ionone, eugenol, ocimene, nerol, geraniol, myrcene, citronellol, limonene, menthol, thymol, pinene, camphor, carvone, vanillin, jasmone, coumarin, quinoline, cinnamaldehyde, muscone, civettone, ambergris, estragole, anethole, and vetivone.
A- and b-ionone:
a-ionone and b-ionone are found in violet oil and can be synthesised from citral and acetone. a-ionone has a violet scent, while b-ionone has a scent reminiscent of cedar and raspberry.
