Definition: alteration

A general term covering the various diseases that can affect wine during vinification and ageing. These vinification accidents or diseases cause the wine to lose its clarity or its olfactory and gustatory qualities. See breakage, bloom, acetic pitting, turning. Mastery of vinification and strict hygiene of cellar equipment have greatly contributed to reducing these diseases.
